On the nose, there’s the richness of toffee mixed with sweet spice, vanilla, and raisins. As you take a sip, you’re immediately met with the sweet, tart taste of apple pie, with a sprinkle of cinnamon and a helping of custard. This is accompanied by beautiful sherry cask notes. On the finish, it’s a smooth blend of warmth, pear and oak that brings to mind soft, amber-tinged autumn evenings.

Dailuaine Distillery

Single malt and single cask bottlings from Dailuaine Distillery are rare and limited with the lion's share of Dailuaine whisky being used in Johnnie Walker blends. Most of Dailuaine's barley is malted in-house, fed into ten wash backs and their six stills. Their water is drawn from the local Balliemullich Burn, producing a heavy and meaty unpeated spirit. Dailuaine Distillery will remain in the history books as the first ever distillery in Scotland to be fitted with a pagoda type roof.

We’re celebrating the craftsmanship and care behind every single-cask whisky by commissioning an artist for every release. Artwork that’s as unique as the whisky – all of our releases will feature a piece of artwork designed with the liquid in mind. No two designs will be the same, much like the casks.For our Dailuaine 14 year old cask, we partnered with the amazingly talented, Evie Grace. Evie is a Scottish artist currently based in Bristol. Since she was old enough to pick up a pencil, Evie developed a deep passion for all things creative.

How we bring One-of-a-kindsingle cask whiskies to life

Stage 1

Spirit Selection

Our Director of Whisky, Alasdair Day, chooses the perfect spirit to work with. This comes from years of experience, friendship, and collaboration with the ﬁnest distilleries from Scotland and beyond.

Stage 2

Cask Selection

Once Alasdair has selected the perfect spirit, a cask is chosen that will accentuate the unique characteristics of the distillery’s spirit. He’ll take into account everything from the type of oak used, and the degree of charring, to the cask’s size and what liquid was previously held inside, for example Olorosso Sherry. Each element impacts the ﬁnal ﬂavour characteristics of the whisky.

Stage 3

Time

The ﬁnal ingredient is the marriage of spirit and cask. Alasdair chooses just the right amount of time to allow the complex and unique ﬂavours to blossom, giving that unrepeatable taste experience that only single cask whisky can bring. And in the meantime, while the whisky is maturing, you can reserve a bottle at a discounted price before it is bottled.

Whether you’re buying a bottle to drink right away, or setting on your maturation journey, the time will come to receive your single cask whisky. And this isn’t the only thing that’s unique - the bottles from each individual cask will have their own bespoke label, designed by upcoming artists, showcasing the individuality of each whisky produced.
