Isle of Raasay Distillery

Distilled in small batches, island quality and provenance are at the heart of what we do. Mineral rich water is drawn from our very own well, Tobar na Ba Bàine, ‘Well of the Pale Cow’, for use in every stage of production – from distillation to dilution, and of course, tasting. The Hebridean Isle of Raasay is the perfect location for distilling, maturing and bottling island Scotch whisky. Our core Raasay expression will be a lightly peated, fruity single malt that combines centuries of expertise with Raasay’s high quality natural ingredients and idyllic landscape.Provenance, people, and fine-tuned whiskies are at the heart of everything we do.

This custom made Speyside 30-litre cask is filled with Isle of Raasay peated spirit. Smaller casks are key to creating a complex, flavour-packed spirit over a short period of time. This is due to the increased surface to volume ratio allowing the spirit to have greater contact with the wood.

How we bring One-of-a-kindsingle cask whiskies to life

Stage 1

Spirit Selection

Our Director of Whisky, Alasdair Day, chooses the perfect spirit to work with. This comes from years of experience, friendship, and collaboration with the finest distilleries from Scotland and beyond.

Stage 2

Cask Selection

Once Alasdair has selected the perfect spirit, a cask is chosen that will accentuate the unique characteristics of the distillery’s spirit. He’ll take into account everything from the type of oak used, and the degree of charring, to the cask’s size and what liquid was previously held inside, for example Olorosso Sherry. Each element impacts the final flavour characteristics of the whisky.

Stage 3

Time

The final ingredient is the marriage of spirit and cask. Alasdair chooses just the right amount of time to allow the complex and unique flavours to blossom, giving that unrepeatable taste experience that only single cask whisky can bring. And in the meantime, while the whisky is maturing, you can reserve a bottle at a discounted price before it is bottled.

Finally

Whether you’re buying a bottle to drink right away, or setting on your maturation journey, the time will come to receive your single cask whisky. And this isn’t the only thing that’s unique - the bottles from each individual cask will have their own bespoke label, designed by upcoming artists, showcasing the individuality of each whisky produced. You have a reminder that every bottle is a limited edition all while supporting the creative arts in our communities.
