Cask-aged rum is becoming increasingly popular and rightfully so. Located just outside Thurso, North Point Distillery is the most northern Distillery in the UK. Focusing heavily on rum while their whisky sleeps, North Point has already won multiple awards for their rum and vodka. Bottling in Autumn 2024 after maturing for five years in a 1st fill Château Latour barrique.

The Château Latour cask, as with most Left Bank Bourdeaux’s is a strong wine with more spice elements, leathers, green apple, and plenty of tannins. As one of the only Rum distilleries in the world ageing in Château Latour casks, North Point Distillery expects the finished Rum to inherit a hearty spice and fruity mid-palette, while bringing a strong smoky finish with hints of oak.

Our Director of Whisky, Alasdair Day, chooses the perfect spirit to work with. This comes from years of experience, friendship, and collaboration with the finest distilleries from Scotland and beyond.

Stage 2

Cask Selection
Once Alasdair has selected the perfect spirit, a cask is chosen that will accentuate the unique characteristics of the distillery’s spirit. He’ll take into account everything from the type of oak used, and the degree of charring, to the cask’s size and what liquid was previously held inside, for example Olorosso Sherry. Each element impacts the final flavour characteristics of the whisky.

Stage 3

Time
The final ingredient is the marriage of spirit and cask. Alasdair chooses just the right amount of time to allow the complex and unique flavours to blossom, giving that unrepeatable taste experience that only single cask whisky can bring. And in the meantime, while the whisky is maturing, you can reserve a bottle at a discounted price before it is bottled.

Whether you’re buying a bottle to drink right away, or setting on your maturation journey, the time will come to receive your single cask whisky.
