Amontillado cask adds lots of sticky fruits like plums dates and bananas with a dollop of frosting and custard. Our Edinburgh spirit has a vibrant yet balanced spirit profile including rich, mellow tones and a rounded butterscotch sweetness synonymous with iconic Edinburgh ales. The specifics of this cask offering represent a thoughtful mediation by our passionate distilling team upon the entire spectrum of factors that could combine to create a completely new whisky profile itself worthy of being an Edinburgh Icon. Inspired by signature notes within the iconic Edinburgh brews; A proprietary mash bill comprised of local Lothian Spring Barley is combined with a proportion of crystal malt, and a touch of chocolate malt. We’ve used “Edinburgh Brewers Yeast”, compromising on yield but unlocking incredible flavour in the process. Double distilled, with cuts optimised to achieve the intended character, the fledging spirit is then matured in a specially selected Spanish Oak cask that’s previously held Amontillado to introduce sticky fruits like plums dates and bananas.

How we bring One-of-a-kindsingle cask whiskies to life

Stage 1

Spirit Selection

Our Director of Whisky, Alasdair Day, chooses the perfect spirit to work with. This comes from years of experience, friendship, and collaboration with the ﬁnest distilleries from Scotland and beyond.

Stage 2

Cask Selection

Once Alasdair has selected the perfect spirit, a cask is chosen that will accentuate the unique characteristics of the distillery’s spirit. He’ll take into account everything from the type of oak used, and the degree of charring, to the cask’s size and what liquid was previously held inside, for example Olorosso Sherry. Each element impacts the ﬁnal ﬂavour characteristics of the whisky.

Stage 3

Time

The ﬁnal ingredient is the marriage of spirit and cask. Alasdair chooses just the right amount of time to allow the complex and unique ﬂavours to blossom, giving that unrepeatable taste experience that only single cask whisky can bring. And in the meantime, while the whisky is maturing, you can reserve a bottle at a discounted price before it is bottled.

Whether you’re buying a bottle to drink right away, or setting on your maturation journey, the time will come to receive your single cask whisky. And this isn’t the only thing that’s unique - the bottles from each individual cask will have their own bespoke label, designed by upcoming artists, showcasing the individuality of each whisky produced.
