Marrying a brewers mindset in relation to grain and yeast selection and a flexible distillery approach that promotes flavour creation above all other factors, we are dedicated to delivering something that is worthy of Scotland’s capital city.
Holyrood is the crucible where the best old world and new world thinking about Whisky converge. Founded by Canadians Rob & Kelly Carpenter (Scotch Malt Whisky Society, Canada) and David Robertson (Macallan Master distiller) with a vision to return Scotch Malt Whisky distilling to Scotland’s Capital after a nearly 100 year absence. Untethered by tradition, Holyrood combines natural curiosity and experimentation of our vibrant distilling team with technical excellence and a pioneering production ethos.
